Fried Buffalo Chicken Wontons Appetizer Recipe

Creamy, tangy, spicy, crispy... this fun fourth of July snack is basically a little triangle of heaven. It takes all that you love about the famous buffalo wing, and encapsulates it in a crispy little triangle of wonton goodness. Like I said, heaven.
This 4th of July appetizer recipe is SO easy to put together, you wouldn't believe that it would taste this fabulous. You can make the chicken mixture ahead of time if you like. You can assemble the wontons ahead of time. Or, you can make this whole thing a make ahead hot appetizer by frying the whole darn things and just reheating them later on in the oven for about 12 minutes at 425 degrees F.
To make this 4th of July appetizer recipe, simply pick up a pre-cooked rotisserie chicken and use that for your filling. They're already moist and flavorful, and work perfectly for this recipe.
Serves about 12 (two wontons each).

Ingredients:
3 C. cooked, chopped rotisserie chicken
1/4-1/2 C. Crystal (or other buffalo-style) hot sauce, as needed
1 tsp. minced fresh garlic
1/4 C. cream cheese, softened
3 tbsp. crumbled blue cheese
24 wonton wrappers
1 egg, beaten
oil (for frying)
Instructions: 1. In a small bowl, stir together the chicken and garlic. Add hot sauce until chicken is well moistened and flavorful, but not soupy, up to 1/2 cup.
2. Stir in the cream cheese and blue cheese. If you like, you can pop your filling in the refrigerator at this point for up to two days. The flavor only improves!
3. Into the middle of each wonton, place a small scoop of your chicken filling, about a heaping teaspoon.
4. Brush inside edges of the wontons with a bit of egg and press to seal (I like to fold the corners in a bit so they cook more evenly).
5. If desired, you can tightly cover you wontons at this point and refrigerate them until you're ready to cook.
6. To cook your wontons, heat your oil to 325 degrees F.
7. Fry wontons 4-5 at a time, until very brown and very crispy. Drain on paper towels.
8. Serve these fun fourth of July snacks with blue cheese dressing and celery sticks.
Cheesy Baked Tex-Mex Pinwheels Recipe

This is such a great appetizer recipe for the fourth of July-- or for any festive get together! It's ultra easy (just used pre-cooked rotisserie chicken), it's really flavorful, and it'll disappear off your appetizer tray. One of my favorite 4th of July appetizer recipes, and one I make almost every year.
Make it Ahead: This is also one of the best make ahead 4th of July appetizer recipes you'll come across. To make this ahead of time, simply assemble all the way up to step 5. Then freeze them in individual pieces, if you like, and simply pop them in the oven frozen. You'll need to add a few extra minutes' cooking time. You can also leave them in the fridge, all sliced up and ready to go, and simply bake as you go.
These also taste great cold or at room temperature... so if you don't feel like baking them you don't have to!
Makes 4 dozen rolls.

Ingredients:
4 (10 inch) flour tortillas
8 oz. cream cheese, softened
1 C. finely diced cooked rotisserie chicken
1/3 lb. pepper jack cheese, shredded
1/4 C. cilantro, chopped
1/3 C. minced green onion
3 tsp. ground cumin
1/4 freshly shredded parmesan cheese
Cooking Spray, as needed
Instructions: 1. First, create your chicken mixture. In a mixing bowl, stir together the cream cheese, diced chicken, pepper jack, cilantro, green onion, and cumin.
2. Divide mixture evenly over your tortillas, spreading to the edges of each tortilla.
3. Roll as tightly and firmly as possible, and wrap each rolled tortilla individually with plastic wrap. Refrigerate at least two hours.
4. Preheat oven to 350 degrees F.
5. Remove rolls from refrigerator, slice into 1/2" slices, and place cut-side-down on a parchment lined baking sheet.
6. Spray with nonstick cooking spray, sprinkle parmesan over evenly, and bake 13-15 minutes, or until cheese is melted and pinwheels are a bit browned.
7. Serve this 4th of July appetizer recipe with fresh pico de gallo, guacamole, and sour cream for dipping.
Bacon and Horseradish Summer Sliders Recipe

This recipe is based off of one created by Emeril, and it's one of those perfect 4th of July appetizer recipes that is kind of a no-brainer. After all, the Fourth is
the all-American holiday, and the burger is
the all-American food.
The recipe calls for teeny hamburger buns, which can be hard to find. Me? Well, I cheat. I buy regular hamburger buns and cut little circles from them with a teeny biscuit cutter (or small round cookie cutter). Yes, you tend to waste a bit of bun this way, but... the effect is worth it. Don't use plain white bread, because you won't get the same soft top crust! High quality hamburger buns are best, but you can use the el cheapo kind.
If you're on the lookout for make-ahead 4th of July appetizer recipes, this can be made ahead, too. Simple make up the burgers ahead of time, mix the mayo ahead of time, and use pre-cooked bacon. Done and done.
Serves 12 as an appetizer (one slider each)

Ingredients:
1 1/2 lb. ground beef
2 tsp. fresh minced garlic
1/4 C. minced onion
1 tsp. salt
1/2 tsp. freshly ground black pepper
6 slices crisp-cooked bacon, halved
12 mini hamburger rolls (or cut-out rolls), split
Horseradish Mayonnaise:
1/2 C. good mayonnaise (I like Hellman's)
2 tbsp. sour cream
3 tbsp. prepared horseradish
1/8 teaspoon fresh ground black pepper
1/4 tsp. salt
Instructions: 1. To make your slider patties, combine the beef, garlic, onion, salt, and pepper. Mix with your hands.
2. Divide into 12 equally-sized balls, and shape into patties. Cover, refrigerate, and let patties chill for at least an hour, or even overnight.
3. To make your mayonnaise, whisk together the mayo, sour cream, horseradish, pepper, and salt. Refrigerate at least an hour, and up to 3 days.
4. Grill you mini burgers about two minutes per side for medium doneness, 3 minutes a side for well done.
5. Serve these little burgers on your buns, topped with a piece of bacon and some of your horseradish mayonnaise. Talk about a fun fourth of July snack!
