    <title>A-mazo-ing Matzo Ball Recipe for Passover</title>

We don't have a section here at Divine Dinner Party for Passover (something that will be remedied soon!), so we thought we'd at least post a great recipe for a 

Passover staple: Matzo balls.  I'm not Jewish, but this wonderful matzo ball soup recipe makes me wish I were.  According to my friend Georgia, this is her 

mother's recipe-- that the best she's ever tasted.  I'm not as experienced at eating matzo balls, but I LOVE this recipe.  You will, too, because they're light and 

scrumptious and absolutely delicious.  Serves 6-8.
&lt;p&gt;
&lt;center&gt;

&lt;p&gt;
&lt;b&gt;Ingredients&lt;/b&gt;&lt;br&gt;
2-3 pieces of chicken&lt;br&gt;
12 cups prepared chicken stock&lt;br&gt;
2 carrots&lt;br&gt;
1 stalk celery&lt;br&gt;
1/2 onion, sliced&lt;br&gt;
2 tsp. dried parsley&lt;br&gt;
2 tsp. chicken bouillon&lt;br&gt;
4 eggs, separated&lt;br&gt;
1 C. matzo meal&lt;br&gt;
3 tbsp. butter (or schmaltz skimmed from homemade chicken stock)&lt;br&gt;
1/2 tsp. salt br&gt;
1/4 tsp. freshly ground black pepper &lt;br&gt;
&lt;p&gt;
&lt;i&gt;Instructions:&lt;/i&gt;Bring stock to a boil.  Boil veggies and chicken until cooked through.  Toss celery and onion, slice carrot and reserve for later.  Cool 

chicken and separate meat from skin and bones.  Cool broth and skim fat from top.
&lt;p&gt;
In a bowl, mix together butter (or schmaltz), egg yolks, matzo meal, pepper, and salt.  Mix well.
&lt;p&gt;
Beat the egg white until soft peaks form.  Fold into mazto mixture.  
&lt;p&gt;
If necessary, add a touch of stock or water to thin batter.  Chill batter 20 minutes or more.
&lt;p&gt;
While batter chills, bring stock back to a boil and add chicken bouillon, parsley and chicken meat.
&lt;p&gt;
Remove cold matzo batter from the fridge-- it should be thickened and stiff.  
&lt;p&gt;
Wet hands and form matzo balls by hand.  They should be about the size of golf balls.   Drop each ball into hot soup. 
&lt;p&gt;
Simmer about 20 minutes, turning once during cook time.  
&lt;p&gt;
Add carrot and warm through.  Serve.</description>

2 oz. feta cheese, crumbled&lt;br&gt;
1/4 C. asiago cheese, finely grated&lt;br&gt;
2 large eggs&lt;br&gt;
1 1/2 C. milk&lt;br&gt;
1/4 C. olive oil&lt;br&gt;
7 oz. fresh spinach leaves, cleaned and chopped&lt;br&gt;
3/4 C. sun-dried tomato, drained and chopped&lt;br&gt;
&lt;p&gt;
&lt;i&gt;Instructions:&lt;/i&gt; Preheat oven to 420 degrees F. 
&lt;p&gt;
In large bowl, combine flour, pepper, and baking powder.
&lt;p&gt;
In another large bowl, whisk together the eggs, oil, and milk.  Add spinach and tomatoes. Stir in cheeses.
&lt;p&gt;
Add wet ingredients to dry.  Mix gently just until combined-- don't overmix.
&lt;p&gt;
Spoon mixture into prepared muffin tins
&lt;p&gt;
Bake about 20 minutes, until golden.  Let cool partially in pans. Serve warm. 
&lt;p&gt;
Makes 12 muffins.</description>
