Covering a Roasting Turkey

Hi there. Thanks for writing in. The truth is, you should almost never cover a turkey while it roasts. Covering the turkey will essentially steam rather than roast it, resulting in soggy-chewy skin. Yuck.

If your turkey is getting too brown, you can tent it loosely with foil nearing the end of the cooking time. That should be all you need!
