How long can you brine a wild turkey safely?

My husband caught a wild turkey we are now brining it. How long can we soak it it in brine. Do we rinse it off when we are ready to cook it?

How Long to Brine Wild Turkey

Hi there. Thanks for writing in with your question. You would normally brine a whole turkey (domestic) about 1-2 days. Wild turkeys tend to be smaller, so they'd need a bit less time, probably about 12-24 hours. If this is your first time brining a turkey, opt the lower end of the time scale just in case-- you don't want your turkey too salty.

Before cooking a brined turkey, rinse the turkey twice and pat dry. You DON'T want the skin wet or it'll be soggy. It's best to let a turkey air-dry in the refrigerator a few hours or overnight before cooking. That way, you get crisp skin AND moist meat.
