When using an electric roaster this page on your site recommended adding white wine and chicken broth to the roaster when cooking for moisture and flavor.

Stock and Wine Amounts for Turkey

When it comes to the stock and wine for a turkey, I like to go two parts stock and one part wine. You can also go 1-to-1 for a stronger wine flavor-- also good!

Start off with perhaps a cup or so of liquid, and add more as needed-- there's no real science to it. Though you don't necessarily want the turkey sitting in a lot of liquid at the bottom, so don't overdo it.
