My Overnight Turkey Cooking Recipe and Method

I have a recipe that says to preheat oven to 475 and place turkey in roaster with celery and onion place in cavity.

Pour melted butter (1 stick) over turkey and salt and pepper(1 tsp. each) Add 4 cupps of boiling water to roaster. Cover and cook for one hour and then turn oven off. do not open oven until morning.

My question is there is no size given for the turkey or turkey breast or how long to leave it in the oven. The recipes says to start the cooking at 9:00 P.M.???? Any ideas on size or time??

I cooked an 11 pound whole turkey and took it out around 10 A.M. and it literally fell from the bones and was so moist!!!!
