Apple-Oatmeal Crumble with Whipped "Irish" Cream

This St Patrick's Day recipe is the perfect finale to my Irish St Patrick's Day menu. It may just be the world's best St Patrick's Day dessert: it's homey, it's warm, it's satisfying... and it's got that perfect touch of Irish: The whiskey! And though it looks like a lot of ingredients, it's not-- I've got them all divided up to make things easier on you. It's actually very simple!

Cooking this dessert for a St Patrick's Day party, and have some kiddos invited? Make two versions of the whipped cream: one plain, and one with whiskey. Or, be lazy like me and buy some canned whipped cream for the kids' plates. They won't notice!

Tip: Make this St. Patricks Day dessert recipe even more festive with a hint of green! Add a bit of green food coloring to the whiskey cream for a bright, festive accent.

Ingredients:

Apple Mixture:
3 tbsp. salted butter
2 lbs. granny smith apples
1/2 C. light brown sugar, packed
2 tbsp. granulated sugar
1 tbsp. flour
2 tbsp. Irish whiskey
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg

Crumble Topping:
1 C. flour
1/2 C. light brown sugar, packed
5 tbsp. unsalted butter, cold, cut into pieces
3/4 tsp. ground cinnamon
1/4 C. oatmeal (not instant)
1/4 C walnut pieces, chopped

Whiskey Cream:
1 C. whipping cream, very cold
3 tbsp. powdered sugar
2 tbsp. Irish whiskey, chilled
Green food coloring, as needed (optional)

Instructions: 1. Preheat the oven to 375 F.

2. Peel, core, and slice your apples into medium slices. In a heavy skillet, melt the 3 tbsp of butter.

3. Add apple slices, the 1/2 c. brown sugar, the white sugar, and the 1 tbsp of flour. Mix well and cook about 5 minutes over med-high heat.

4. Stir in the cinnamon, nutmeg, and whiskey. Simmer 1 minute. Remove from heat.

5. To make your crumble topping, combine the flour, oats, and brown sugar in a bowl. Mix with a fork. Cut in the butter with a pastry cutter or a couple of forks until the mixture looks like coarse crumbs. Stir in walnut pieces.

6. Grease an 11x7" pan and pour apple mixture in. Sprinkle crumble mixture over. Bake until apples are bubbling and tender and topping is crisp and golden, about 40 minutes.

7. Let cool slightly before serving. While cooling, prepare the whiskey cream.

8. To make whiskey cream, whip the cream in a chilled bowl with an electric mixer until soft peaks form. Whip in the sugar and Irish whiskey (and green food coloring, if using). Continue whipping until stiff peaks form.

Another Tip: If you want a bit of extra flavor in this St Patrick's Day recipe, take the time to toast your walnuts and oatmeal in the oven until browned slightly before assembling your crumble topping-- the flavor gets much more intense!
