Caramelized Onion Dip

This recipe, based on one by the Barefoot Contessa, makes just about the best onion dip you've ever tried. One bite and you'll agree-- that's a promise. Hellman's mayo tastes best with this, but you can use whatever you like. Makes about 4 cups.

Ingredients:
4 large onions, sliced (about 6 cups)
1/2 C. butter
1/3 C. olive oil
8 oz. cream cheese, softened
1 C. sour cream
1/2 C. good quality mayonnaise
1/2 tsp. chili powder
1 1/2 tsp. kosher salt
1 tsp. freshly ground black pepper

Instructions: 1. In a large skillet, melt butter into oil over medium heat.

2. Add the onions, salt, and pepper. Saute onions over medium heat about 10 minutes.

3. After the 10 minutes, turn the heat to medium-low and saute onions about 20 minutes, until they are caramelized.

4. Set aside to cool.

5. Meanwhile, combine cream cheese sour cream, and mayo in a medium mixing bowl. Mix with an electric mixer until fluffy.

6. Stir in the cooled onions.

7. Serve dip at room temperature.
