The recipe provided here is for a basic --and quite tasty-- deviled egg. But feel free to use your own recipe! What makes this fun Easter recipe special is the technique for forming your hatchling chicks, not the egg mixture in and of itself.
Note: Peppercorns also make good --and very cute!-- eyes for these little deviled egg chicks. But be sure to warn people to remove them before eating or they'll get a spicy surprise!
Makes 12 Easter hatchlings.
Ingredients:
12 extra lg. hardboiled eggs, carefully peeled
1/2 C. mayonnaise
2 tbsp. milk
1 tsp. dried parsley flakes
1/2 tsp. dry mustard powder
1/4 tsp. salt
1/4 tsp. paprika
1/8 tsp. freshly ground black pepper
1/8 tsp. garlic powder
24 pimento stuffed olive slices (for eyes)
24 small triangular shaped pimiento, bell pepper, or carrot pieces (for beak)
Instructions: 1. Carefully slice the bottom off of each of your eggs so your hatchlings will sit up straight.
2. Carefully cut each egg in half in a zig-zag pattern with a small, sharp knife. Dump the yolks into a mixing bowl. (Be careful not to break your whites!)
3. Mash your yolks well. Add mayo, milk, and spices. Stir well to mix. Mixture should be very smooth and creamy.
4. Fill the bottom half of each egg generously with yolk mixture. Gently place the cut-off top on top of mixture-- you don't want to press it down.
5. Gently press two olive slices into the filling of each egg for your chicks' eyes. Add two triangular pieces of pimiento, carrot, or pepper for a beak.
6. Refrigerate until ready to serve. And be gentle with them! This free Easter recipe is just a bit delicate... you don't want your hatchlings' faces falling off!
