Easy, Amazing Strawberry Shortcake
This is a truly delicious Mother's Day recipe for strawberry shortcake-- you'll probably never go back to your old recipe again. It also works well if Mom's on a diet... just use
light or fat-free cream cheese instead of regular. Another bonus? If you buy a pre-made angel food cake, there's no need to heat up the oven, making this the
perfect no-bake Mother's Day recipe that kids can make for Mom. Simply cut up the
cake and strawberries beforehand and let the kids assemble.
Ingredients:
4-5 c. fresh, ripe strawberries
1/2 c. granulated sugar
1 pkg. (8 oz.) cream cheese, softened
1 c. powdered sugar
1 pkg. (8 oz.) Cool Whip
1 angel food cake (about 14 oz.), cubed
Instructions: Wash strawberries and remove green stems and tops. Slice each strawberry in half.
In a medium bowl, combine strawberries and sugar. Cover and let sit in the refrigerator until needed.
Combine cream cheese and powdered sugar in a large mixing bowl. Beat until smooth and well combined.
Fold in Cool Whip. Gently stir in angel food cake.
Cover and refrigerate two hours or more.
Either top whole cake with strawberries before serving, or top each cut serving of cake with strawberries.
