Festive Green Caramel Apple Dip

While the apples you use for this St Patricks Day appetizer can be both green or red (apples are a great choice for St. Paddy's, as they're a traditional Celtic food), the dip itself should be bright GREEN! Use a food coloring paste for the best --and greenest-- results.

Recipe serves about 8-12, and can be made up a day or two ahead-- easy stuff! Just be sure to sprinkle your apple slices with lemon juice if you cut them ahead of time (to keep them from browning). The taste of this is surprisingly caramel-y with just the addition of brown sugar and vanilla.

Ingredients:
16 oz. cream cheese, softened (low-fat works okay)
1 1/2 C. brown sugar
2 tsp. vanilla extract
Green food coloring, as needed

Instructions: 1. In a medium mixing bowl, combine all ingredients. Beat for about 2-3 minutes, until well mixed and sugar is mostly dissolved. Beat in green food coloring, as needed.

2. Chill at least two hours before serving. Stir or beat one more time before scooping into your serving bowl.
