Fiadone (Ricotta Pie) Italian Easter Dessert Recipe
Fiadone, a wonderful and very rich ricotta cheese pie, is a famous Italian Easter tradition. Texture-wise, it's somewhere between a cheesecake and a cheese pie... and though it's not very sweet, a small slice goes a
very long way.
Be sure to use really good ricotta for this Italian Easter dessert recipe-- it's worth splurging on. Serves 10.

Ingredients:
16 oz. good-quality whole milk ricotta cheese
1/2 C. granulated sugar
2 eggs
1/2 C. whipping cream
Zest and juice of 1 lemon
1/2 C. golden raisins
1/2 tsp. vanilla extract (optional)
1 (8-inch) homemade pie crust, unbaked
Instructions: 1. Beat eggs until light and fluffy. Add sugar to the eggs and beat to combine.
2. Add ricotta cheese and cream and blend well. Add the lemon juice and lemon zest. The optional vanilla can be added here.
3. Pour mixture into homemade pie crust and bake in a preheated 325 degree oven for 1 hour, or until firm when tested with a knife.
4. This ricotta pie is a cousin of the cheesecake and can be served with fruits or plain.
