Buffalo Chicken Diploma Wraps for a Graduation Party

It's a celebration! So you've got to have some food to serve for a graduation party that celebrates getting that cherished diploma. Which is why I love these diploma sandwich wraps-- they're fun, they're flexible, and they definitely fit the theme.

These savory wraps can be made with a simple flour tortilla, and are easy to customize for your guests. To create an authentic diploma you will need a ribbon to tie the wrap together.

Ingredients:
1 lb. cooked, shredded rotisserie chicken
2 tbsp. hot sauce, according to taste
3 tbsp. white vinegar, divided
1 tbsp. melted butter
1/4 tsp. cayenne pepper
1/8 tsp. cracked black pepper
3 tbsp. mayonnaise
2 tbsp. plain yogurt
1/2 C crumbled blue cheese
4 8-inch flour tortillas
1 C. shredded lettuce
1 C. diced celery
1 large tomato, diced

Instructions: 1. In a bowl, whisk hot sauce, 2 tbsp. vinegar, butter, pepper, and cayenne pepper. (For a mild sauce use only 1 tbsp hot sauce.)

2. Toss shredded chicken in hot sauce mixture until evenly coated.

3. In a separate bowl, combine mayonnaise, yogurt, pepper and 1 Tbsp vinegar. Fold in the blue cheese.

4. Lay tortillas flat and place a portion of the mayo mixture and buffalo chicken in the middle. Add lettuce and celery and wrap tightly. Cut wrap in half and wrap with ribbon.
