"Just-Fed" Zombie Cupcakes Recipe

These fun cupcakes are so easy to make, and look really creepy-- the gaping, gooey "mouths" created by the jam make them one of the best Halloween snack recipes. They're the perfect I've-just-feasted-on-brains zombies! The base is a delicious homemade lemon-yogurt cupcake that combines beautifully with the raspberry jam filling. But if you're feeling lazy, simply use your favorite cake mix.

Makes 10-12 cupcakes, depending on how big you make them.

Ingredients:
1 1/4 C. all purpose flour
1 tsp. baking powder
1/4 tsp. salt
1 C. sugar
1/2 C. unsalted butter, melted, cooled
1 lg. egg
1/2 C. plain, unsweetened yogurt
4-5 tbsp. fresh lemon juice
Zest from one lemon
1/2 C. raspberry jam
powdered sugar
24 chocolate chips

Instructions: 1. Preheat the oven to 350 degrees F. Place paper liners in muffin pan.

2. In a medium mixing bowl, stir together the flour, baking powder, and salt

3. In a large mixing bowl, combine the sugar, melted butter, and egg. Stir until smooth. Add yogurt, lemon zest, and lemon juice. Stir until smooth.

4. Add flour mixture. Mix until just smooth.

5. Spoon batter into prepared cupcake pan. For each cupcake, drop 1-2 teaspoons of raspberry jam on top of batter.

6. Bake 22-25 minutes, until done. Let cool in pan for 10 minutes, then remove from pan and cool completely on a wire rack.

7. The raspberry jam should have baked into a gaping, scary-looking mouth. Sift powdered sugar over cooled, prepared zombies. Don't use too much, as you don't want to cover up the creepy mouths.

8. Position two chocolate chips as "eyes" above each raspberry mouth.
