Roasted Baby Carrots

These roasted carrots don't need any extra ingredients to taste absolutely amazing. The roasting brings out their natural sweetness... and they don't need a thing to get adults and kids alike ooh-ing and aah-ing over them.

You can also make this Easter dinner menu recipe by cutting whole carrots into fat sticks. But I think the naturally sweet flavor of baby carrots is just perfect for the high-temp roasting method used here.

Recipe serves 8-10

Ingredients:
2 lb. baby carrots
2 tbsp. olive oil
3/4 tsp. salt

Instructions: 1. Preheat the oven to 475 degrees F.

2. In a resealable bag, toss together the carrots, oil, and salt until well combined.

3. Pour out onto a baking dish, keeping in a single layer if possible.

4. Roast about 20 minutes, stirring well halfway through.

5. Carrots are ready when they're slightly browned and fully tender.
