Shamrock Spirals: A St Patricks Day Party Recipe
I love these tasty little spirals! With the green tortillas and the spinach inside, they're already nicely green-colored. But if you'd like to "shamrock" up this St Patricks day food a little bit more, simply add some green food coloring to the cream cheese mixture.
The best thing about this easy St Patricks day food idea? You can make it ahead. The day of your party, all you've got to do is unwrap your rolls and get 'em sliced. Easy peasy.
Serves about 12.
Ingredients:
8 10-inch spinach-flavored flour tortillas (the green ones)
20 oz. frozen spinach, thawed
8 oz. cream cheese, softened (low fat is okay)
1/4 C. mayonnaise
3/4 C. sour cream
2 tsp. onion powder
2 tsp. garlic powder
1 tsp. dried parsley
1/2 tsp. freshly ground black pepper
1/8 tsp. celery salt
1/8 tsp. dried dill
1/2 C. chopped green onion
1/2 C. finely chopped crisp-cooked bacon
Instructions: 1. Let the thawed spinach drain completely. Squeeze dry between paper towels or with your hands. The spinach should be quite dry, or you'll end up with a watery filling.
2. To make spinach mixture, combine spinach, cream cheese, mayo, sour cream, and all the spices in a mixing bowl. Mix with a wooden spoon until well combined.
3. Spread mixture evenly onto your eight tortillas, leaving a little filling-free space (about 1/2") around the edge of each one.
4. Place each tortilla on its own piece of plastic wrap, and roll your tortilla as tightly and firmly as you can. Wrap your roll firmly in plastic wrap.
5. Chill the rolls overnight, or at least 6 hours.
6. Unwrap your rolls and cut off the ends of each one. Eat the ends (like I do) or discard them-- whatever you like. Slice the rolls, while still cold, into 1/2" slices (or a bit bigger if you prefer). Serve chilled.
