Traditional Herb Turkey Stuffing

As far as traditional turkey stuffing recipes go, you can't do better than this. It's bursting with all the flavors you expect on Thanksgiving: pungent sage, earthy mushrooms, and crunchy walnuts. This bread stuffing recipe is the perfect classic Thanksgiving stuffing (or dressing). So good!

This is one of those turkey stuffing recipes that's also easy to play with. Want to add a handful of dried cranberries or trade the walnuts out for pecans? This is one of the best turkey stuffing recipes to adapt to your family's tastes. Play around with it! Like the recipe above, this can be made a vegetarian stuffing recipe by subbing vegetable broth for the chicken.

Serves about 10 people, and stuffs a 20-23 lb. bird. If you prefer make-ahead turkey stuffing recipes, assemble it all the way up to step 7. Chill, covered, up to 24 hours and bring to room temperature before baking as directed. I always shred up a large loaf of bread, crusts trimmed, and leave it out overnight about a week ahead of time, then seal in plastic bags until ready to use.

Ingredients:
9-10 C. stale, hard bread, shredded into 1" chunks
3/4 C. unsalted butter, melted
12 oz. crimini or button mushrooms, cleaned and chopped
2 medium yellow onions, coarsely chopped
3 stalks of celery, coarsely chopped
6 cloves of garlic, minced or pressed
2 lg. eggs, beaten
3/4 C. chopped walnuts
1 tsp. salt (or to taste)
1 tsp. freshly ground black pepper
2 tsp. dried rubbed sage
1 1/2 tsp. dried thyme
1 tsp. dried rosemary
1 tbsp. poultry seasoning
1/4 C. chopped freshly parsley
5 C. chicken broth, or as needed

Instructions: 1. In a large skillet, melt butter. Add onions and celery and cook about 5 minutes.

2. Add mushrooms and garlic and cook until mushrooms are barely tender, about 3 minutes longer.

3. Place mushroom mixture in a large mixing bowl.

4. Add salt, pepper, and other herbs and spices. Stir to combine.

5. Stir in nuts. Stir in bread pieces. Stir in beaten eggs and 1 C. chicken broth.

6. Add additional broth until this bread stuffing recipe reaches your desired level of moistness, at least 2 additional cups. You can add up to 4 additional cups for very moist stuffing.

7. Pour herb stuffing mixture into a large, buttered casserole dish.

8. Covered with buttered foil. Bake in a preheated 350 degree F oven 45 minutes, or until hot throughout.

9. Uncover and bake 15 minutes more, until top is crisp.
