This simple summertime appetizer recipe is a personal favorite-- fresh and seasonal stuffed cherry tomatoes. The color of tomatoes makes them POP on a platter (we eat with our eyes), and the size is ideal for summer party finger food.
Note: If you're not big on bacon you can swap it out for cooked ground sausage, flaked crab, or cooked chopped shrimp. This is one of those flexible (and easy!) summer outdoor cooking recipes
Recipe makes enough for about four guests.
1 pint cherry tomatoes
1/2 C. mayonnaise
1/4 C. each fresh grated Romano and Parmesan cheeses (or 1/2 c. Asiago)
2 cloves minced garlic (or 1/8 tsp. garlic powder)
1 tbsp. finely minced fresh basil
1/2 lb. hickory smoked bacon, cooked, drained, and crumbled
1/2 tsp. freshly ground black pepper
Chive, cut into 1-2" pieces, to garnish
Instructions: 1. Slice off the top of the cherry tomatoes and then scoop out the middle (a melon baller works great for this). Turn each tomato upside down over paper towels so excess juice drains out.
2. Meanwhile mix together all other ingredients (this is your stuffing).
3. Fill the tomatoes with your filling and chill before using. Can be made up to 12 hours ahead.

1 c. diced fresh mango
1 c. orange or guava juice
2 tbsp. extra virgin olive oil
1 small cucumber, peeled, seeded and diced
1/2 red pepper, cleaned and diced
1/2 sweet onion, peeled and diced
1-2 cloves garlic minced
2 tsp. minced hot pepper (optional)
2 tsp. fresh lime juice
2 tbsp. cilantro (fresh chopped)
Salt & freshly ground black pepper, to taste
Instructions: 1. Using a blender, puree the mango with the juice and olive oil.
2. Put the remaining ingredients in a bowl and pour the juice over top. Season to personal tastes. This is best if it chills for several hours so the flavors can marry.

Of course, if you're planning your recipes for a summer dinner party, the first thing that springs to mind will be your grill, if you have one. The main dish for summer parties is very frequently some type of barbecue. Grilling has become one of the most popular pastimes, and some individuals guard their grill with a gusto previously only known to secret family recipes!
