Roaster Oven Turkey Sizes and Wine/Stock Amounts?

I am going to attempt to prepare our Thanksgiving turkey in a 16qt Rival Roaster this year. What size turkey should I be looking for? The width of the roaster is about 11".

Also there was a great suggestion your how to roast a turkey in a roaster oven page about using a combo of chicken stock and white wine in the bottom of the roaster to keep the turkey moist and to create a base for the gravy. How much of each (wine and stock) should I use? Would a 1:1 ratio be alright?

Turkey Sizes and Cooking Liquids

Sounds like your all lined up to have a great Thanksgiving. For a 16qt roaster, I'd try to stick to a turkey under 16-18 pounds or so. Larger roasters (18 qts or so) can cook turkeys up to 20 pounds, but I'd pick something a bit smaller for yours. I know this sounds weird, but the best thing might be to go by measurements. You want to leave about an inch of space all around the turkey, so pick a bird with about an inch smaller diameter than your roaster. Sometimes judging by weight isn't the best way to go!

As for the chicken stock/white wine mixture... I like to go two parts stock and one part wine. Though a 1-to-1 ratio is also good, it gives the finished gravy a really noticeable wine flavor that might overshadow the turkey flavor a bit. It's nice... just a bit different. So I guess it all depends on what you want!
