Turkey breast vs. whole turkey- stock for dressing

I am considering cooking two turkey breasts (for 12 adults) instead of a whole turkey because my family does not eat dark meat. Will I still have enough turkey broth to make dressing?

When making turkey breast, if you use a turkey bag there will be natural broth in the bottom of the bag. Some turkey breasts come with a small bag of broth too.

Hi Vicki. The amount of turkey broth you get from making a turkey will depend on the amount of liquid you put in the bottom of the pan. More liquid equals more broth. So, yes, two turkey breasts will make enough broth if you put enough liquid (like chicken stock) in the bottom of the roasting pan.

That said, not having a whole turkey will affect the flavor of your drippings-- they won't be as rich-tasting. And if you DO put extra liquid in the bottom of your roasting pan, be sure to elevate your turkey breasts on a rack. If they sit in the liquid, they'll boil in there and get soggy and unpleasant.
